Black fine truffle

Tuber melanosporum Vitt.

The outer part called “peridium” or “scorza” is verrucous, coal black colour. Its inside called “gleba” is black-violet in the ripeness with many white and thin veins. The scent is delicate and very pleasant that’s why is called “sweet black” sizes are variable from pieces of few grams up to 1 Kg weight.

It is avisable to preserve the truffle in the fridge wrapped in absorbent paper, closed in a glass container and to consume it within 7/8 days. The picking begins the 15th of December until the 15th of March.
